The location I do it from is:
Edit->Preferences->Composer Preferences->Signatures
You then pick which signature block you wish to do and then select the

I have no direct idea about your problem other then a suggestion.
Make sure your VM is OFF. Otherwise it might be that the VM is grabbing
the mail before your "live" one and then its not available to the live
one to down load.

I write to HDD then copy to a USB to put it onto another machine and
the USB looks like it has written (i.e. says done) but the buffers take
minutes longer to write out fully so Linux says
I too use my inbox as the sent folder and then file from there.
I have been doing it for years and works well and reduces the emails I
keep greatly to just what is needed.
I also never use threads and things work better.

To change your list
Try
Evolution->Edit->Preferences->MailAccounts
Set your default account there.
You can still pick to change it for particular emails but it will
default to that.
Also note there are settings so that it replies using the account the
email was sent to which might or might not be what you want.

I do agree never downgrade over major versions. That is why they are
usually major version as big changes

I tracked down what causes the font to revert to B&W and not use the
icon type set by tweaks.
If I use Evolution 3.44.0-1. fc36 they work fine.
If I upgrade to 3.44.3-1.fc36 it reverts to the B&W ones only.
I guess I will now log this a bug in github then.
I will wait a day or two in case

Sorry to bother everyone again.
I have 5 systems which are basically nearly exactly the same.
On three of them the icons are (were) working correctly in evolution.
I can change them and they change.
For 2 systems they refuse to change in evolution.

Pointing me at the themes has lead me to solve the problems.
I needed to make sure tweaks, chrome-gnome-shell and user-themes
installed (they were on my machine).
Then the actual icons. I have found gnome-colors-icon-theme these ones
fine.
One system is still not 100% correct so
