I think the Evject thing is marketed to people who are not going to have
the ability to start hacking into their wiring.

You only need to be able to drive away.
Grab a $0.25 12V relay. Install a panic button on yr dash (or re-use
the 4-way flasher button) that will result in the relay interrupting
the Proximity signal, or the Pilot.
No, if you put enough force on the latch that could remove the connector,
it will prevent the latch motor from retracting. It's a tiny motor with a
current limit.
