bindings can be modified by hand, this is not stored anywhere. But if

I can't reproduce your problem and there are new versions of gnucash in stable
(1.8.10-12) as well as testing (1.8.10-19) and unstable (1.8.12-8) available.
Could you please test if one of those already fixes your problem with the
freeze when trying to load the Tutorial and Concept Gui
This isn't a bug. The syntax is
X "grep stuff %F"
(with the quotes)
If unsure about the syntax, use the [...] button that helps you build
correct condition strings.

because it needs some XCursor.la file. This comes from libvte which
needs a rebuild agains current libxcursor.
Rebuidling it fix the FTBFS of xfce4-terminal.

as it is not used anymore.
