It’s basic maths — you want version numbers to be strictly monotonously
increasing:
3.10 = 3.1 < 3.8 < 4.0

it’s because Arch linux package darktable-git just takes the latest head from
the active development branch, so you see that there has been a couple of
hundred commits since you built the previous package.
