Use a two line bridle with a single lift ring or shackle.  You can shorten one line or the other to move the balance.  If you're lucky you'll be able to move the lift ring forward or aft to get it where you want it.  That's how I lift my Lido.  Actually, I use a 3 line bridle but same principle.

The best way to find out is to put a small child in the lazarette and motor around for a few hours. If the kid has blue lips or is non-respnsive at the end of the day you might have an exhaust leak. If you have water running down into the bilge from somewhere back there, or see unexplained so
