There's a guy on YouTube who mailed airtags to n Korea and several other
places just to track them for a video, pretty interesting. They seem to
work pretty good, dare I say almost as good as a cellular tracker?

You can do a heck of a lot with a Raspberry pi. That's still a server,

Would an Email to SMS be sufficient? The Ancient APC stuff could do
this with contact closures triggering an email sending, all from the APC
board itself. That's almost instant. I'm guessing you meant 'no
server' as in the triggering device needing to talk to a server that
does the alerting.

I am ok if there is a server, I just don’t want to host it. I use sonoff
devices to remote control things. I think their server is in Korea. I want
reverse sonoff.

Sonoff has some sensors that could be kludged to do the job. An alarm panel
that will push a notification will work. SMS is fine.
