Before the cell server, I used notebooks with prepared @interacts. Later
I just used the cell server. Mostly for differential equations classes.
This is a great use that requires no training for your students: you
just do it. And the readability of Python means you can explain what's
going on to anyone, even if they don't know any programming. 

I also have done something a bit like Rob: I did some demos of LaTeX and
of editing a worksheet, then had the students solve a problem and
explain the outcome (something like: what would happen if we *didn't*
take the conjugate when computing inner products of complex-valued
vectors?). They shared the worksheets with me and I graded them by
editing in my own comments. This worked well and with some more work and
refinement could be even better.
