Instead of stripping Ubuntu, what about building up a minimal Debian?
Any command-line skills used in development work would transfer over
to a more-desktop oriented distribution based in Debian, such as
Ubuntu.  The "testing" distribution of Debian, despite the name, has
always worked well for me, and has the advantage of being basically
continuously updated, instead of major 6-month releases like in
Ubuntu.

The following probably are not directly comparable, but perhaps not
surprisingly they have similar installed footprints.  I imagine it
would depend on if, and what type, of window manager might be
installed

Ubuntu JeOS looks to be 380 MB installed:

Debian thread has one user getting 350 MB installed size just by
unchecking options:
