I modified latex_preamble, did "sage -docbuild a_tour_of_sage latex", and the changes I made showed up in doc/output/latex/en/a_tour_of_sage/a_tour_of_sage.tex. (I picked a_tour_of_sage because it's the smallest document, so presumably the fastest to play with.)
