Harvest Chicken Chowder
(Weight Watchers: Simply The Best)
Ingredients:
2 tsp.    olive oil
4            onions, chopped
3 clove  minced garlic.
1 lb.      boneless skinless chicken breast, diced
2 cups   chicken broth
2 ribs    celery, sliced
1            carrot, sliced
15 oz.    pumpkin purèe
12 oz.    fat free evaporated skim milk
1/4 cup       parsley
1/2 tsp  sage
1 tsp      thyme
to taste       black pepper
Directions
       In large nonstick Dutch oven heat oil.  Add onion
and garlic; cook, stirring as needed, until softened, about 5
minutes.  Add chicken, broth, celery and carrot; bring to a boil. 
Reduce heat and simmer, stirring as needed, until the chicken is cooked
through and the veggies are tender, about 10 minutes.  Add pumpkin,
milk, parsley, sage and thyme. bring to a simmer, stirring as needed. 
Be careful not to boil soup, especially if you're not using fat free
evaporated milk, otherwise it will break and will be ugly and
non-creamy.  Serve, sprinkled with pepper.
