CHRISTMAS MAPLE MOUSSE

1 c. maple syrup
5 egg yolks, beaten
1 pt. heavy cream, whipped
1 egg white, stiffly beaten

Warm maple syrup, add beaten egg yolks. Boil until thick, stirring
constantly, on low heat. Cool, then add whipped heavy cream and beaten egg
white. Blend
together until well mixed. Pour into ice cube tray and freeze. Cover with
foil. Serves 6-8 and very rich.
