CHRISTMAS LIME PARFAIT PIE   

2 (3 oz.) pkgs. lime jello
2 c. boiling water
1 tsp. shredded lime peel
1/3 c. lime juice
1 qt. vanilla ice cream
1 (10 inch) pastry crust, baked

Dissolve jello in boiling water. Stir in peel and lime
juice. Add ice cream by spoonfuls, stirring until
melted. Chill until mixture mounds slightly when
spooned.
Pour into cooled baked crust. Chill until firm
(overnight). Top with whipped cream or Cool Whip. Top
with a cherry.
