Alabama Biscuits Makes 35
2 packages Dry Yeast Warm Water 1 Tbsp. Sugar 4 cups Flour 8 tsp. (2 Tbsp. + 2 tsp.) Baking Powder 1/2 tsp. Salt 2 T. Sugar 6 Tbsp. (3/8 cup) melted Shortening or Oil Combine yeast, 1/2 cup warm water, and the tablespoonful of sugar; let stand 5 minutes. Meanwhile, sift flour, baking powder, and salt into a large bowl. Combine 1 cup warm water with the two tablespoonfuls of sugar and the melted shortening or oil. Combine wet ingredients with flour mixture to form a soft dough. Turn onto floured board; knead until smooth. Roll out biscuit dough fairly thin, and cut into about 35 rounds. Grease tops of all biscuits. Make short stacks of two biscuits each, one on top of the other. Place in a greased pan; let rise until double.
