Setback seatposts are the norm with a Brooks, no problem there. Just guessing from the photos, but if you're really an 84 PBH I'd say your saddle was too low. Got a picture of you on the bike?
A 56 Sam is effectively bigger than the 58 Saluki you thought was too big. You'd be left with nearly zero standover, which may or may not suit you. A 52 Sam would effectively be a wash with the 54 Homer, not much to gain there. A 56 Homer would be slightly bigger than your 54, but to get that same bar height you'll still need a stem with a very long quill. If you feel cramped on the Homer as it is, I'd try a stem with a longer forward extension, or a handlebar without so much pullback before switching frames. It's cheaper and you'll learn a lot from the changes that would inform your next bike purchase.
