Your setup doesn't look like the bike is too small. As long as it feels fine, it's fine.
I'd think on a 56 Hilsen/Saluki that you'd be running a slightly shorter periscope stem (unless you wanted to extend the reach slightly), but it'd still be high because it looks like you prefer your bars that way. You'd have a bit less standover height. I have the same PBH and a 58 Saluki fit but felt too big. The 56 Sam I test rode felt a little long in the top tube. I remember looking at the 52 Sam and thinking it'd be too small. My 57 Bleriot was just right. I briefly had a 54 Saluki but didn't build it up because I quickly realized it would be too small for me with my preferred reach/ drop. I'm 5'9" or so.
