Me, I like knickers (American, not British) with nice wool socks. Bicycle Fixation's are good (socks and knickers) but I've had my own made from quality Goodwill wool dress trousers, having the leftover material from the leg bottoms sewn inside on the thighs and waist for added wind protection.
As for the hems, I simply have them cut and hemmed at the right length -- I like mine long, for the Tintin look (http://tiny.cc/81qx0) -- and then have velcro added to the bottom. Be sure to choose high waisted pants for better in-the-hooks fit. I've been thinking of taking similar pants and having them tapered and 6" zippers added but haven't yet done so. Lastly, Co Cyclist had a pair of cycling long pants in the last catalogue I got: I noticed them but didn't pay much attention. ~$160, IIRC.
