Another thing about fitting advice is this small piece of it: be wary of
large changes.

3 cm is a lot, whether you are going up or down.  If you were to lower your
saddle sufficiently, you'd start to incur patellar pain.  This is one sign
it's too low.  And if you don't find patellar pain early in a ride and you
find it later, it's still too low, it's just not so drastically too low.

Be careful, and don't hurt your knees.  There is a sweet spot between knee
pain and excessive pelvis rocking.  Once you get it, measure it, mark it, or
whatever, but be sure you can reproduce it.

And as you say, I believe this just common sense.  Maybe it's the max power
point, or maybe it's not.  But as a Rivvy, toury,
let's-go-62-miles-just-for-an-afternoon's-fun kind of rider, it won't be
tolerable to cause knee pain or damage, nor will it be tolerable to cause
chafing sores on your you know whats due to rocking.  But will it be
acceptable to pedal at 3% more effort than your max?  Yeah, probably it
will.

That kind of logic probably goes back to the penny farthings!
