I don't have a Quickbeam, but have used a 3-cog SS setup for a couple of years. You can shift by stopping (of course), loosening the QR, moving the chain as needed and retightening the QR. There's only so much gear range that the dropout length will cover with the same chain, but on my Crosscheck set up thusly i can use a 42x16,18,20, and i'd expect a Quickbeam's fork end to have a similar range. I use a standard 8-speed chain, never had a problem with the deflection of being 'out of chainline' 1 cog over either way.
