I've only used the 700C X 60 Big Ones tubeless, but I think that the G One is the current name for the same or a very similar tire -- ie supple, plump, light; if so, I would guess that the 40 mm Big One is close to what you want. I can't say enough good things about the 60 mm Big One run tubeless; they "feel" as fast as my EL 559 X 29 (and 175 gram!) Compass Elk Passes (these with tubes) and certainly faster than the Furious Freds, which are themselves fast and smooth tires. The 60s weigh 450 grams, amazingly light, if that is anything to go by; and with sealant I ride them in goatheads and gravel, yet they "feel" as if they roll as well as Michelin Pro Races. I would guess that the best Schwalbes are as good as the best Compasses.
Schwalbe's size/model/width/variation charts are as hard to interpret as the symbolism of Revelation, but they do mention a 700C X 40. FWIW.
