My favorite bar for many years now on my Quickbeam is the WTB flared dirt drop. The 58cm Nitto RM-3 is the closest bar I’ve found to that.
My stem is a riser Salsa from the 80’s, maybe 125mm long with a 40* rise from horizontal. Not an extreme rise. Bars are an inch above saddle height. I’ve run moustache bars and Salsa Woodchippers on other singlespeeds, and been pretty happy. I’d say to ride what you like on geared bikes.
