Actually, Scott was over 500 pounds. An incredible weight loss story. Anyway, when getting back into cycling my weight was over 350. The bike I chose was a basic Specialized Hardrock Disc. The wheels were the weak point on that bike. Broke a number of spokes. Otherwise, the frame and fork held my weight without a single complaint.
While custom bikes are certainly a fine choice, the modern aluminum mountain bike really can handle a lot of weight. And the compact frame makes things a lot easier to straddle. And trust me, I straddled a lot trying to catch my breath after riding a few miles. Wasn't pretty. But that's my bias. Would rather see someone buy a less expensive bike and upgrade later as size decreases and mobility increases. What works now might not in the future.
