My saddle is between 72-72.5 and I'm on a 56 Ram and 57 Bleriot. I also once owned a 58cm Ram as the size recommended by Grant and it fit the same with a shorter stem, handled well, but frankly I traded downsize because I didn't like the less than a fistful of post and slammed stem look myself. I think I could have easily gone with a 55 Bleriot as well as I like a short top tube with drops. I test rode a 54.5 Atlantis and it fit great as well.
I would recommend you go with the 56cm if you want swept back bars.
