I have two thoughts on this topic. 1. Buy what you want to buy, and guess at the likelihood that you will regret your decision: a. Buy a 54. What is the likelihood that you won't like it, due to too much seatpost showing? It sounds very likely to me. What is the likelihood that you'll change your aversion to revealed seatpost? I might not be reading you well, but you seem like somebody who has their mind made up on such a topic. b. Buy a 56. What is the likelihood that you will decide it is too big? Since you hate exposed seatpost and since all Rivs have a low BB, I think it is VERY unlikely that you will declare that the Standover height is too high. You aren't a crotch-worrier. Since you are putting swept back handlebars on it, the longer TT of the 56 is better. It is very unlikely you will decide the TT is too long. You might decide it's too big if you switch to drop bars later, but you are in control of that.
2. Make sure you talk to more than one person at Riv. If you want somebody at Riv to tell you that a 56 is OK, ask for Will or Grant. If you want somebody to tell you that a 54 is better for you, talk to Vince (maybe Roman). Also, read the room. If the conversation was long, tedious, or confrontational at all, maybe give the same person another shot. Tell them "Hey, remember me? We talked about 54 vs 56 AHH, and I'm really leaning towards 56. Your own sizing chart says it's OK, so it's OK right? I'm not a crotch worrier and I'll be running upright bars. I think it'll work, don't you?" Grant has an 85PBH and did perfectly fine on a 60cm Hillborne. It wasn't ideal, but it was fine. Your attitude should be that you are a responsible adult. You owe it to yourself to gather some information and then decide. If you regret your decision down the road, no biggie. Sell that frame and get something else. It sounds to me like you already hate the 54, so buy the 56. It'll be fine, and if it's not, sell it.
