The pre-sale method is not unique to Rivendell, and is really a brilliant 
way to manage cash flow.  Even better is Acorn's "pay with order" but 
what's workable on $100 items would be a stretch for a $2,000 item.  

Business runs on cash flow & inventory turns.  Retail is tough.  You've got 
to have stuff to sell but you don't want 6 months supply of Schwalbe tires 
in 3 sizes & 4 models.  It's a balancing act, trying to figure out what 
sells & how fast.  Good example is 2 Atlantis frames.  Mine is sn 519 & my 
wife's is 488.  When I ordered my 58, there was a few week lead time as 
they had a batch in progress.  So mine was sold before they got it.  From 
the sn, my wife's 47 was built prior.  When we bought her bike from a 
previous owner, it looked brand new, and was a Riv standard build.  So that 
small frame may have languished in inventory for quite while before the 
original owner bought it.  Months?  Years?  Inventory is dead money until 
shipped.
