Yes, a dos freewheel with just one chainring will work, sliding just two 
links worth of drop out, I believe there are 8 links of dropout slide 
available? The advantage of the double chainring set up is with the dos you 
get even more range as long as you don't cross chain (depending on the 
numbers you may or may not be able to. I have three gears available on mine:

40/16 is my high (outside chainline)
32/19 is my low (inside chainline)
32/22 is my ultra low (22 freewheel on the flip flop). 

Combine that with LCG (lowest common gear, walking) and there ain't nothin' 
I can't ride! Of course since you live where it is flat flat flat, perhaps 
gear up to a 48/40 front chain ring? If I was on the flats, I'd want 
something higher than 40. Have fun! It's a blast riding the learning curve!
