You're right, from a modern perspective, it's "out there" to eat mostly 
animal fat. From a bigger picture and understanding nutrition, relying 
heavily on grains and veggie oils and processed foods with who knows what 
in them is the "out there" diet, and is at most 60 years old out of 2 
million of human evolution. Dairy works for me, so I use it, but it is far 
from the only way to get healthy fat. What's "out there" is the need to eat 
carbs constantly to do activity. I used to have to eat food every two hours 
or my brain stopped being able to function. Since I shifted to burning fat 
instead of glucose as my primary fuel, I can ride all day long and feel 
great without eating anything. On my last 7.5 hour ride I ate nothing and 
drank about 40 oz. of water total. All the "science" the low fat idiocy was 
based on is being revealed for what it is, complete bunk. For a clear 
explanation of this I recommend reading "Grain Brain."
