In my humble experience, you pick a gear and stick with it. I rode 72" across California and Nevada and for all of Paris-Brest-Paris. I rode all four brevets in the 2007 season and changed gears a total of about three times (all on the 600K brevet, and two of those changes to were to gear down for several miles of 10% uphill and then back down again).
