I noticed that among VO's offerings, some headsets are listed as
having "sealed bearings", whereas others make no mention one way or
the other.

Are sealed bearings the way to go? The one called Tange Levin at VO
looks pretty dope, from a retro standpoint. But it makes no mention of
the bearings, unlike the one named Falcon.

That one also says JIS. What is that and how does it differ from the
others that say ISO?

For what it's worth, I'll be using it on a Masi Gran Corsa, which I
believe was made in Italy in the late 1980s:
