Hi, the presence of a qmail-default file (or its equivalent in a different mta) is not really a feature of the MTA but rather a decision by domain owners. Some (probably businesses) want to get all mails sent to them (so they can receive inquiries at salles@ or suport@ Others (probably sites supporting a lot of individuals) simply dont see any sense in receiving mail to nonexistent accounts Whether or not to reject these accounts right away or bounce them later is a different decision.
