Another vote for Dragon Dictate. It's far from being perfect, but about the
best you can achieve.

Your wife would probably need to set up a user just for the meetings so that
Dragon Dictate learns the voices of those that attend regularly.

In the beginning she must correct all recognition errors almost religously
using the correction options built into Dragon Dictate. Otherwise the
software won't learn the various different voices and the business
vocabulary.

The sound quality has a huge impact on the recognition rate in Dragon
Dictate. Olympus voice recorders have one or more menu options to control
the mic sensitivity. She might need to play around with different settings
to find the best one.
