Hi George,
thanks for the hints. I forgot to mention that I used the original Apple
drives, which are Maxtor 655-1110B ones.
They work fine under macOS and are also detected on Linux (though I have other
issues there).
I now just tried another random old drive I found in the attic and funnily
enough it works.
Attached is the dmesg of a succeeded install on the new hdd with another
original one still attached.

My observation is that when the entire system freezes (e.g. from some kernel
panic),
the fans would slowly spin up until their maximum speed and the whole machine
sounds like an aircraft about to take off.
The same happens for example when I wait for too long in the boot_config
prompt, but then when the OpenBSD kernel has started to a certain point, they
will spin down again.
Are you referring to this extreme spinning or are they just a little bit louder?
