In theory, yes: it is possible. In practice, no: it won't work. The vast majority of mail servers do not (and will never) use IPv6.

I'd suggest you to read D. J. Bernstein's opinion on IPv6 ( http://cr.yp.to/djbdns/ipv6mess.html ). He might be an unpleasant person, but twenty years (!) later it seems reasonable to conclude that he was mostly right, that it is regrettable his opinion was not taken into account, and that IPv6 will never happen as it was supposed to happen.
