I have some experiece both (Courier,Dovecot) with postfix. First off
all: postfix works perfectly Courier and Dovecot. As I see:
Courier: relatively easy to configure and maintenance, gives an average
performance at mailbox access.
Dovecot: more complex configuriation (compared to Courier), gives very
good performace at mailbox access
Personally I would recommend Dovecot. Main reasons why I would choose
Dovecot: Dovecot has powerfull admin tool (doveadm) makes easier to
maintain the config even though needs a bit complex setup. Dovecot uses
indexes (e.g. in Mialdir) which makes it very fast when accessing mails.
