Hi, I have finally figured out the problem and it was nothing to do with Postfix. The application on the local server had been misconfigured and was supplying an incorrect value (undefined) to the BCC field which had been completely overlooked in the logs.
Apologies for taking up your time on this (but I have learnt a lot about debugging the whole Postfix/mail process - so time well spent on my part!).
