Generally, Postfix is I/O bound and and adding CPU does not dramatically improve throughput. Adding disk spindles, NVRAM disk cache, ... will likely help more if CPU is not consumed by content inspecition. Add CPU when you notice that CPU utlitilization is high and impacts on email delivery rates (delivery latency goes up as CPU utilization rises). -- Viktor.
