Setting mydomain equal to myhostname strikes me as being odd.
I did this per the directions for setting Postfix up with Gentoo. If I
change it I'll need to change other items on the system for sure so
I'll look into this first before making changes.
it's ok to have mydomain = myhostname.
should you change anything, it would be the hostname of the machine (to
something like "hostfoo.students.wes....") but then you may break things
in your system (and you'll need to update dns)...

See, here is where I have a question. When I set this to the default I
never passed the online mail server tests and my mail was caught in
spam, etc.
The smtpd banner has nothing to do with mail you send. it is how postfix
welcomes clients (including MTAs) at reception time.
remove the setting from your main.cf (so that postfix uses the default
value) and if you have any problems, come back with detailed infos on
what's happening... etc.
When I have it set like this everything works correctly.
