I did this per the directions for setting Postfix up with Gentoo. If I
change it I'll need to change other items on the system for sure so I'll
look into this first before making changes.

See, here is where I have a question. When I set this to the default I never
passed the online mail server tests and my mail was caught in spam, etc.

When I have it set like this everything works correctly.

Any ideas?
