Perhaps surprisingly, Postfix actually behaves as documented.
Where does Postfix documentation say that myhostname understands
file names?

To set a fixed Postfix name, set the right hostname in main.cf, or
set the right hostname in the kernel. If you need to change the
Postfix name constantly, then that is an indication of illegitimate
activities.
