Exchange has "Envelope Journalling", which encapsulates the message
envelope and contents and delivers this to a mailbox of your choice,
which can be forwarded for external archiving.

Postfix has recipient_bcc_maps to create copies of messages while
capturing the original recipients, the rest is up to you (processing
the resulting messages in a sensible way).
