This discussion has reminded me of an option that was added in Postfix 3.10: smtpd_hide_client_session <http://www.postfix.org/postconf.5.html#smtpd_hide_client_session>
(I'm waiting for my distro to upgrade Postfix so I can try it out for myself!)
