Did you enable player.source to "debug" - if not then do so and check for "underrun" messages.
Did you enable "Server Health" monitoring and see if there is anything odd (e.g. buffer not full, tasks taking too long). Since you have a wired network - have you tried with WAV directly and not using flac or lame. As a side issue on a Linux system I had a similar experience of "stuttering" when feeding audio from a TV/FM Tuner card. No stuttering when audio was recorded as a file and played back but stuttering when streamed from radio audio in realtime. Also no stuttering when radio audio was streamed through PC "Line-in" port.
