I'm giving dnsmasq a go.

First hurdle was that NetworkManager uses a cut-down version of dnsmasq to improve DNS lookup times, so that's already installed by default but doesn't do what I need. The "fix" is to disable it in /etc/NetworkManager/NetworkManager.conf then install the dnsmasq package.

From there all it seems I need is to add:
    address=/.server1/192.168.10.100
to a new file, /etc/dnsmasq.d/myservers.conf, and then restart dnsmasq, and Bob is my uncle.
