Apropos reducing clutter in mailing list replies, the most sensible system I've come across is that used by the FirstClass conferencing application, where if you select the part of the message you want to reply to and then hit the reply button, the app produces a mail form showing only the quote and details of who sent the message you took it from. It also 'threads' related messages, so you can choose to follow only threads you're interested in. Outlook is pretty poor by comparison. FirstClass conferencing software is horrendously expensive however...
