Either. Pinhole diameter and distance from the film plane determine aperture and focal length. So you can use a body cap for a short focal length. Or you can use a lens cap on extension tubes (not on a lens) for longer focal lengths.
A few weeks ago, I did a Yahoo! search for pinhole photography and was surprised by how many sites popped up. There are sites selling body and lens caps modified to accept little inserts drilled for different pinhole diameters. Just switch inserts to change hole diameters. Some have little spring loaded hole covers that you can open manually to make an exposure. It was an interesting search.
