"Out the box" OTRS will be using sendmail (which in turn will pass it to postfix).
Check /etc/postfix/main.cf and look for the value myhostname or myorigin and see what the values are. myorigin is usually configured to point to /etc/mailname which is a text file that will contain the FQDN of your server which postfix uses when it performs HELO (don't forget to restart postfix after making any changes).
