My best guess would be to use send-hooks.

Maybe something along the lines of:

set default_hook="~C %s"
send-hook . \
        'my_hdr From: Benjamin Pharr <[EMAIL PROTECTED]>'
send-hook .*[EMAIL PROTECTED] \
        'my_hdr From: Benjamin Pharr <[EMAIL PROTECTED]>'

Hope that works.  It should,  I took it out of some comments from my
.muttrc file that I downloaded.  8o)
