Maybe heat? Mpeg2enc will push your CPU to run at 100% power for quite a lengthy amount of time, and if your CPU cooler is not able to handle the heat load, you can get crashes and freezes. Also, are you overclocking? If so try it without overclocking. If it works correctly at regular speed, then you were pushing the clock just a bit to far.
