I didn't write that MUAs do SPF checking.

Entirely true, but Sender: has impact on the value of MAIL FROM: for
some programs.
Our Listserv for example has.

But it depends on the application. If the mailing list system sets the
MAIL FROM address to the list-boun...@lists.example.org address,
everything is fine for SPF, regardless of From: or Sender:.
