I can’t estimate how much work it takes to set up a mail server.
Which server do you use?
I'm a bit embarrassed to admit it, but I'm still using Eudora Internet
Mail Server (EIMS) because it's so damn easy to configure and it's so
reliable. I have stunnel in front of it for TLS support. However, I am
in the process of moving to postfix and dovecot. I plan to run them in
Docker containers.
Do you have any advice on which one is the easiest to set up? I’m
not sure how to choose between the available options.
I'd guess that some of the paid options would be easier. I'm going with
dovecot and postfix because they're both used a lot, so I figure any
bugs will be detected and fixed quickly. Also, I know the dovecot
developer.
