Hello Brian, I can't speak about Docuscan, but ABBYY FineReader does an excellent job of scanning and OCR. There's also VueScan which can also do OCR. It isn't as good as FineReader, but you can use it for free if you don't mind the watermark it leaves on each image. You have to get VueScan from the developer as it isn't in the Mac Appstore.
